This beer has been in wrapped in a paper bag in my fridge for over 2 years, and last week I finally cracked it open. The wait was worth it...
Belgian Strong Dark Ale
9.4% ABV
Appearance:
Pours a crystal clear, deep red/amber. Quite beautiful. Thick head.
Smell:
Chilis, cinnamon/nutmeg. A bit of sweetness from the malt and Belgian yeast.
Taste:
The chilis add a unique flavor profile. This beer does not have the sweetness that you get with many Belgian styles. It is very smooth on the tongue with a bitter finish. The chilis add to the bitterness and add a bit of heat upon impact with the stomach.
Mouthfeel:
Robust! Coats the tongue and palette. It insists upon and double swallow with each taste.
Overall:
This beer has aged very well! Light carbonation adds to the smooth flavor and texture. The chilis add an interesting heat in the stomach without a strong alcohol flavor or character.
